Asparagus and Feta Scramble

1/2 cup cut asparagus
2-3 eggs
1-2 tbls. crumbled feta

Saute aspargus until soft. Scramble eggs in bowl and pour over asparagus. Cook til eggs are done, and top with feta. Sprinkle with paprika and pepper. Serve with a side of cottage cheese.

Alfredo Meatballs

48-60 frozen meatballs
1 jar alfredo sauce
1/2 cup water

Mix ingredients in crock pot and cook on low setting for 6 hours.

Variety:

I added one can of Cream of Mushroom the last hour and it tasted like salsibury steak.

Avocado Bread

2 2/3 cups all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon baking powder
3/4 teaspoon salt
3/4 teaspoon ground cinnamon
3/4 teaspoon ground allspice
1/2 cup butter, softened
1 7/8 cups white sugar
3 eggs
1 1/2 cups mashed ripe avocado
3/4 cup buttermilk
3/4 cup chopped pecans
1/2 cup raisins
1 tablespoon grated orange zest

1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9x5 inch loaf pans. Sift together the flour, baking soda, baking powder, salt, cinnamon and allspice. Set aside.
2. In a medium bowl, cream together the sugar and butter until light and fluffy. Beat in the eggs one at a time, then mix in the mashed avocado. Stir in the dry ingredients alternately with the buttermilk until just mixed. Fold in the chopped pecans, raisins and orange zest. Divide the batter evenly between the two loaf pans.
3. Bake for 1 hour in the preheated oven, or until a toothpick inserted into the center of the loaf comes out clean. Allow loaves to cool in pan for at least 20 minutes before removing.

Bacon Wrapped Chicken

4 boneless chicken breasts
1 brick of cream cheese
1 brick of pepper-jack cheese (shredded)
8 slices of bacon

If frozen, thaw chicken breasts, rinse and pat dry. Place Chicken breast (one at a time) between a piece of plastic wrap and pound with meat tenderizer until 1/4" to 1/2" thickness. Set aside. In a medium bowl combine cream cheese and pepper-jack cheese until well mixed. Form cheese mixture into 4 equal balls. Place one ball of cheese in center of chicken breast and roll chicken around cheese. Wrap bacon around chicken (it should look like a gift wrapped in ribbon) and place in a shallow baking dish. Repeat for all chicken breasts. Bake on 425 for 1 hr 15 min. Broil 5 more minutes to crispin bacon. Serves well with salad or green beans.

This is very easy and fun to make! My dad loves it and makes it almost weekly!!!

Apples Rings

Core an apple and then slice 1/4" thickness in the shape of rings. Serve with a variety of dips and spreads: Yogurt, Nut butters, caramel, chocolate sauce etc...YUMMY on a crisp Autumn day.

Potato and Sausage Casserole

4 medium Potatoes peeled and sliced
1 lb. fully cooded kielbasa or Polish Sausage
2 medium onions, sliced, seperated into rings
1 (10 oz) can cheddar soup, undiluted
1 (10 oz) can cream of mushroom soup undiluted
1 (10 oz) package frozen peas, thawed ( I use broccoli)


In a greaed 5 qt slow cooker; layer a third of the potatoes, sausage, onions and cheese soup. Repeat layers twice.

Pour cleam of clery soup over the top. Cover and cook on low for 5 1/2 hours or until the potatoes are tender. Add the peas and cook 30 minutes loner.

(I used fresh broccoli and added it in the beginning when I layered the ingredients)

Meatballs

The kids helped me make and eat these meatballs! They were a big hit. I served half and froze half for another meal.


2 lbs ground beef
1 pkg Stove Top stuffing chicken flavor
1 cup water
2 eggs

Mix ingredients and shape into 1 1/2 inch balls. Line cookie sheet with tinfoil and spray with nonstick cooking spray. Bake in oven on 400 for 15-18 minutes.

Chicken and Gravy

4 chicken breasts
4 slices of bacon cooked and crumbled
4 large carrots sliced thin
1 onion chopped
2 celery sliced
1 cup low sodium chicken broth divided
1-8 oz. brick 1/3 less fat cream cheese
brown rice cooked

In skillet cook chicken breasts 5-6 minutes on each side or until done. Remove from skillet and keep warm. Cook carrots, onion, celery, and 1/2 cup chicken broth, covered, in skillet until carrots are tender. Add the rest of chicken broth and cream cheese, cook until cream cheese is melted and gravy thickens. While gravy is thickening, cut chicken breasts into 1 inch pieces. Add Chicken to thickened gravy and veggies. OPTIONAL: Add spices to your liking...I like sage, and garlic salt. Heat for 2-3 minutes, and serve over rice. Top with bacon crumbles. YUMMY!

Pumpkin Dip

1 pkg instant vanilla pudding mix
1 tub cool whip
1 can pumpkin
Pumpkin Pie spice to taste

combine all ingredients until mixed well. Chill one hour. Serve with graham cracker sticks.
